Ingredients
1.5 to 2 pounds Blue Grotto Beef sirloin
2 tablespoons olive oil
3 tablespoons butter
4 garlic cloves, minced
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon paprika
Optional: fresh parsley for garnish
Instructions
Let the sirloin sit at room temperature for about 20 minutes before cooking.
Pat the beef dry and season both sides with salt, pepper, rosemary, thyme, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Add the sirloin and sear for about 3 to 5 minutes per side, depending on thickness and preferred doneness.
Reduce heat slightly and add butter and garlic to the skillet.
Spoon the garlic butter over the beef for 1 to 2 minutes as it finishes cooking.
Remove from heat and let the beef rest for 5 to 10 minutes before slicing.
Slice against the grain and top with fresh parsley if desired.
